General aim: The research intends to verify the relationship between the protein constituents, typed on the basis of the different genetic polymorphism, and the lipid composition with particular reference to the content of conjugated linoleic acids (CLA).

Main achievements of CRA-FLC:

  • Determination of fatty acid composition and CLA of milk of different species (cow, sheep, goat, buffalo);
  • Development of an analytical system (SPE/HPLC/GC/MS) suitable for the characterization of the structure of the main triglycerides of milk fat.
  • Detection of the main TG molecules showing differences within the species
