General aim: to study the incidence of L. monocytogenes on the surface of Gorgonzola cheese and in the production and ripening environments, and to evaluate systems to reduce the risk which without impact on product characteristics.

Activity and achievements of CRA-FLC:

  • Evaluated the presence of L. monocytogenes on the rind of the cheeses and studied the relationships with the physico-chemical and microbiological characteristics of different products
  • Characterization of L. monocytogenes strains isolated from the surface Gorgonzola cheese
  • Assessment of the behavior of L. monocytogenes on the cheese during the storage
  • Survey on the origin of contamination in plants of production and ripenig
  • Experimental evaluation of new techniques (High Pressure Processing) or methods (washing of surface with pressurized water) to reduce L. monocytogenes from the surface of Gorgonzola.
