The Alisal project is proposed to characterize the lipid fraction of Milk Fat Globule Membrane (MFGM) in relation to the stage of lactation, which is one of the most important endogenous factor affecting the variability of milk fat constituents. On the MFGM extracted from milk samples of Friesian cows, selected for uniformity of age and number of calves, and fed under controlled conditions, the analytical determinations useful to determine fatty acid and phospholipid composition will be carried out.
